Chicken Salad with Apple + Almonds | New Canaan & Darien Moms

 

Here’s another family crowd pleaser, plus it’s gluten free! Try this delicious chicken salad recipe, which is great for lunchboxes, sandwiches or as an after-school snack served with crackers.

Chicken Salad with Apple + Almonds
(GF, RSF)
Yield: 8-10 Servings

Ingredients:
4 cups rotisserie chicken, shredded
3 scallions, sliced, white and green parts
1 cup jicama, diced (you can substitute celery)
1 granny smith apple, grated and juice squeezed out and reserved 2-3 tablespoon reserved apple juice
3⁄4 cup mayo
1⁄2 cup greek yogurt
1 Tbsp whole grain mustard
1/4 cup fresh parsley, chopped
Kosher salt
Fresh cracked black pepper
2/3 cup toasted almonds, chopped
In a large bowl, combine chicken, scallions, jicama or celery, and grated apple with one tea- spoon of salt and a few cracks of black pepper. Toss to combine.
Add apple juice, mayo, yogurt, and mustard. Mix together. Taste for seasoning and add more salt if desired.
Lastly, add your almonds and mix to distribute throughout.
Serve on salad, scooped with crackers or tortilla chips, or in a sandwich
